Vegetable Chow Mein / Indo-Chinese Recipe


Vegetable Chow Mein is a lip smacking Indo-Chinese dish. It is also one of the popular street foods of India. In this the cooked noodles are stir fried with vegetables and tossed in sauces and seasonings. The soft noodles taste great with the tangy spicy crispy stir fried veggies.

My son loves Chinese food and most of the times when we go out to dine, we end up eating a Chinese platter. i generally make Manchurian and Schezwan fried , but Vegetable Chow Mein can also be easily made at home and the best part is that, we can adjust the seasonings and add veggies of our choice to it. A tangy and spicy vegetarian dish that can be made in less than 20 minutes and had at any time of the day .

I have added cabbage , carrots , onions and bell peppers in this chow mein , you may add mushrooms , french beans , sprouts , spring onions or other veggies of your choice. Tofu can also be added .

Ingredients:

·        1 packet of Haka Noodles ( 200 grams)
·        2 Onions , sliced
·        1 Bell Pepper , sliced
·        ¼ cup Cabbage , shredded
·        1 large Carrot , cut into long thin strips
·        4-5 cloves of Garlic , finely chopped
·        1 inch piece of Ginger, finely chopped
·        2-3 Green chilies / slit
·        1 tsp freshly ground Black Pepper
·        2 tsp Chilly sauce
·        2 tsp Soy sauce
·        2tsp Tomato sauce ( optional)
·        1 tsp Vinegar
·        2 ½ tbsp. Sesame seeds oil
·        Salt to taste
  
Method:

1.      Cook the noodles as per the instructions written on the packet. Meanwhile chop the veggies and keep all the ingredients ready.



   2.  Drain the cooked noodles in a colander and rinse thoroughly under running water to stop further cooking.

  3.    Add 1 tsp of oil to the noodles and toss them to coat the oil evenly , this is to avoid them from sticking. Cover and keep aside until use.


  4.    In a non stick wok, heat the remaining oil and add garlic , ginger and green chilies to it and saute for about a minute.


   5.  Add the sliced onions and saute for another 1 minute. Now add the shredded cabbage , carrots followed by the bell peppers. Stir fry all these veggies on a high flame for 2 minute or so.


  6.  Now lower the flame and add the soy sauce , chili sauce, tomato sauce ( if using) and vinegar. Season with salt.


  7.    Stir well and add in the cooked noodles followed by the black pepper powder. Increase the flame at this point . Mix well and toss the noodles with the stir fried veggies for about a minute. Put off the flame.



  8.  Serve the veg chow mein immediately and enjoy it while still hot.
