Eggless Coconut Cookies Recipe


 Home made Cookies are simple sweet treats perfect for any occasion. My son is enjoying his session break and i made this coconut cookies for his play date. All the kids were more than happy to have the fresh home made goodies . These Coconut cookies are delicious , sweet and crunchy on outside and soft from within and they just melt in mouth. Kids will love this in their snacks box. They are served best with a cup of tea or coffee or can be had just to satisfy ones sweet cravings !

These Coconut Cookies are egg-less and are made from whole wheat flour . I have added brown sugar as a sweetener. The recipe is simple and easy to follow and can be made with the ingredients present in our kitchen pantries. 

  Ingredients: Measurements 1 cup = 200 ml
  • 1 cup Whole wheat flour
  • 1/2 cup Brown Sugar 
  • 1/4 cup unsweetened desiccated Coconut + 2 tbsp extra
  • 4 tbsp Ghee
  • 3-4 tbsp Milk or as required.
  • 1 tsp Vanilla extract
  • 1/2 tsp baking soda
  • Pinch of Salt
 Method: 
  1. Grind the brown sugar in a grinder to fine powder. Keep aside. My son has a sweet tooth so i added 1/2 cup sugar. If you want mildly sweet cookies , a little more than 1/3 cup , should be good enough. Preheat the oven at 180 degree Celsius for 15 minutes. Line the baking tray with a parchment paper. 


  2. In a bowl , take 1 cup whole wheat flour . Add 1/4 cup desiccated Coconut , powdered brown sugar , baking powder and salt. Mix well.


  3. To this mixture add the 4 tbsp ghee and 1 tsp of vanilla extract and mix well to get a crumbled mass.

  4. Add required quantity of milk very little at a time and gather the flour to a dough. Do not knead much.



  5.  Pinch out lemon size dough and make round balls and press between the palms to flatten it slightly. Follow the same for rest of the dough. Tap the cookies on desiccated Coconut and place them on the parchment paper lined baking tray.  The above ingredients yield 10-12 cookies. 


  6.  Bake the cookies in a preheated oven at 180 degree Celsius for 18-20 minutes. Keep a watch after 15 minutes as temperature may differ from oven to oven . Also the size of the cookies matter. To check for doneness just press the top of cookies with a spoon , if impression is formed , it means the cookies are underdone. Bake for 1-2 minutes more. Over baking will make the cookies hard.


  7. Allow the cookies to cool down on the rack and transfer them to air tight container. The cookies will turn little hard on cooling. Enjoy the freshly baked melt in mouth cookies with cup of tea or coffee with your loved ones.
