Eggless Whole Wheat Banana Bread


Never had thought egg less baking would be so fuss free and easy. Once baking a nightmare for me has now turned into an addiction. I am simply loving it. Had replaced eggs with curd in my Pineapple Muffins , tried using flax seeds in my Moist Carrot Cake , and now it was turn of ripen bananas to replace eggs !

A perfect tea time snacks with goodness of Banana and Walnut. Have added tutti frutti to make it more appealing to the kids . Use of whole wheat flour makes it all the more healthier :)

Ingredients:
  • 1 1/2 cup whole Wheat flour (300 gm )
  • 1/2 cup Sugar
  • 1/2 cup Oil (any refined oil, i have used Sunflower)
  • 1/2 cup Milk
  • 2 mashed over ripe Bananas
  • 1/4 cup chopped Walnuts
  • 1/4 cup tutti frutti
  • 1 tbsp fresh lemon juice
  • 1 tsp Vanilla essence
  • 1 tsp baking soda
  • 1 tsp baking powder
  • Pinch of salt


  Method: 
  1. Sieve the wheat flour, baking powder, baking soda, and salt in a bowl and set aside.

  2.  Grease the loaf pan with butter or ghee and then dust with little flour or line it with a parchment paper. Preheat the oven at 350 degree Fahrenheit / 180 degree Celsius . 


   3.   Mix the chopped walnut and tutti frutti with 1 tsp of flour and keep aside.


  4. In a mixing bowl mash the over ripen Bananas with a fork, add sugar to it , stir in milk and Oil and mix well. To this add the vanilla essence.


  5.  Add the flour mixture to it and gently fold in the dry ingredients with the wet ones. To this add the lemon juice and mix .


 6.  Lastly add the chopped walnuts and tutti frutti to the batter and mix well.


  7. Pour the batter to the prepared loaf pan . Tap it to remove air and place it in the preheated oven. I have baked the bread using convection microwave, so no preheating required. 


  8.  Bake the Banana bread at 180 degree Celsius / 350 degree Fahrenheit for 30-35 minutes . Keep a watch after 25 minutes as temperature may differ from oven to oven.  


  9.  Remove from loaf pan from the oven and insert a skewer to check the doneness. If the skewer or knife comes out clean, the cake is done. If not bake for another 5 minutes. Allow the bread to cool in the pan for 5 minutes. Run a knife through the edges of the loaf pan. Remove the bread on a plate.

  
10.  Cut the eggless whole wheat Banana bread into slices and serve warm or cold with tea or Coffee. If you like the crust dark brown in color brush the top of the bread with milk after 20 minutes of baking. Enjoy this healthy and yummy treat with your loved ones !
